
Livradois has 3 dairies in the heart of the Auvergne mountains and produces a large selection of unspasteurized as well as pasteurized cheeses: on one side, the whole line of Auvergne cheeses (Blue cheeses as unpasteurized Bleu d’Auvergne and Fourme d’Ambert, St Nectaire, Cantal, etc.), on the other Raclettes, Montboissié and a selection of cow-milk specialties.
